The 7 Principles of HACCP

Critical limits must be measurable and supported by science or regulatory requirements.

Monitoring answers:

“Are we controlling the hazard right now?”

Principle 5: Establish Corrective Actions

  2. How was the immediate issue corrected?

  3. How will we prevent it from happening again?

A product does not reach required cooking temperature:

Verification confirms that the HACCP system is working.
